Herb Crackers

This recipe uses flour that contains unmodified gluten and may not be appropriate for those with a true gluten allergy.

Herb  Crackers

Ingredients:
• 2 cups Einkorn flour: https://amzn.to/4clJi6f
• 1 cup oat flour: https://amzn.to/4dgHPja
• 1 tbs pure stevia*: https://amzn.to/4cuGAf6
• 2 tsp salt
• 4 tbs Ghee butter**: https://amzn.to/4fDTPg6
• 1 cup cold water
• 2 tbs chopped fresh rosemary (or other herb of choice)
• 2 tbs flax seeds or mixed seeds***: https://amzn.to/3WY8Hyq or https://amzn.to/3Ato4pM

Instructions:
• Heat oven to 450 degrees
• Mix all the dry ingredients
• Add in softened butter and water and mix well
• Roll out a portion of the “tacky” dough on a floured surface and roll to desired thickness (1/4" or thinner)
• Brush surface of dough with olive oil and prick with a fork
• Cut dough into desired “cracker” shapes using a cookie cutter and then place onto parchment paper lined cookie sheet. Make sure the crackers don’t touch
• Bake one pan at a time for 11 minutes
• Pull the tray out and remove crackers that are already “crispy,” then cook the rest for another 2 minutes. Continue this process until all crackers are complete. (for me, I repeat this for each cookie tray two or three times)

*Pay attention to ingredients lists, the larger packages contain erythritol or maltodextrin. It costs more to buy pure stevia, but it is VERY sweet, so you don’t need much at all and it will actually last you just as long as the others mixed with these “fillers.”
**Soften or melt this butter by placing it in a pan of heated water. Try to avoid microwaving as much as possible as this denatures many of the proteins in our foods.
***Use these seeds on most things you cook including meats, baked/broiled veggies, etc, as they offer great protein, omega-3, and fiber with a smaller carb load.
