Lentil Snack

Lentils offer a cholesterol free, plant-based, source of protein, fiber and carbohydrates for more balanced glycemic control. Be sure to always wash lentils prior to eating them, whether soaking them or not.

Lentil Snack

Ingredients:
• 1 package lentils*: https://amzn.to/4fEpEWa
• 2 tbs olive oil**: https://amzn.to/4dFupNe
• Salt

Instructions:
• Wash and soak the lentils for 24 hours, then rinse thoroughly
• Lay lentils out on a towel to fully dry
• Once dry, place lentils in a gallon Ziplock and add the olive oil
• Close the Ziplock and shake the bag to evenly coat the lentils
• Pour the lentils onto a cookie sheet lined with parchment paper
• Sprinkle the lentils with salt (or whatever seasonings you want)
• Broil the lentils to desired consistency (5-8 minutes)

*The package provided through the link states that soaking isn’t required for these green lentils, but I still soak mine.

**Many oils on the US market actually contain seed and vegetable oil as fillers. Goya is known to be a pure olive oil source. When purchasing olive oil, look for where the oil comes from, and choose brands that only show one source, not multiple sources for the oil.
